Why is cooling such an important process for food safety?

Safe cooling requires removing heat from food quickly enough to prevent microbial growth.

Extended periods of time for cooling of potentially hazardous foods (PHF) has been consistently identified as one of the leading contributing  factors of food borne illness.  Even if the cooking temperature of the food is adequate prior to cooling, there may be spore forming organisms in the food product, and spores are not killed by this cook step.  When there is slow cooling, spores can germinate resulting in the multiplication of vegetative cells which in turn make people sick.

The following guidance is a way to assure that your food is being cooled safely:

·         Potentially hazardous foods need to be cooled from 135 F to 70 F in 2 hours or less,

·          then from 70 F to 41 F in an additional 4 hours.

·         The total cooling time for any potentially hazardous foods should not exceed 6 hours or it should be considered unsafe for consumption.

For more information, please contact the division of Public Health Inspections.
